These little shrimps are so simple to make and I love the sweet taste of the coconut paired with rice and a veggie.
1 C coconut
1/4 C flour
1/4 tsp salt
1/4 tsp pepper
1 egg, whisked
1/2 lb. cooked shrimp
olive oil
Mix the coconut, flour, salt, and pepper in a small bowl.
Place the egg in a separate bowl.
Heat the oil in a frying pan.
Dip each shrimp into the egg followed by the dry mixture (you may need to pat the mixture onto the shrimp for it to stick).
Place in the pan and cook until golden brown on each side (2-3 minutes/side).
Serve warm.
