Blueberry Peach Crumb Bars

If I had to choose one category all my desserts would come from for the rest of forever, it would be anything fruit!  Cobblers, fruit pies, fruit dipped in chocolate, fruit filled pastries, etc.  But it would have to be real fruit, not just fruit filling!  I love fruit desserts and this one was no exception.  It made me so excited for summer, farmers markets, and living off of fresh produce for the few precious months of summertime.


Crumb Mixture
1 C sugar
1 tsp baking powder
3 C flour
1/4 tsp salt
1 egg
1/4-1/2 tsp lemon juice
1 C cold, sliced butter

Filling Mixture
2 cans peaches, drained and chopped into bite-sized pieces (or 2 C fresh peaches, cut into bite-sized pieces)
2 C fresh blueberries
1/2 C sugar
4 tsp cornstarch
1/2-1 tsp lemon juice

Preheat the oven to 375.
Grease and 9"x13" pan.
Mix together 1 C sugar, flour, salt, and baking powder.
Using a pastry cutter, blend in the butter, egg, and 1/4-1/2 tsp lemon juice until the dough forms large crumbs.
Press 1/2 the dough into the bottom of the pan.

In another bowl, gently mix together the peaches, blueberries, 1/2 C sugar, cornstarch and remaining lemon juice.
Pour over the dough in the pan.
Cover with remaining dough.

Bake for 45-50 minutes or until the top layer is golden brown.
Let the crumb bars cool completely before cutting or serve warm with ice cream.
