Apple Oat Pancakes
Here is the latest invention. These pancakes are hearty and absolutely delicious with strawberry sauce. Give them a try!
1 1/2 C oat flour (use a food processor to make 1 1/2 C oats into oat flour)
1 1/4 C (or 1 15.5 oz can) applesauce
2 tsp baking powder
2 tsp cinnamon
Combine dry ingredients in a bowl.
Mix in applesauce and egg.
Scoop about 1/4 C portions onto a skillet on medium heat.
Make sure you create a pancake shape with the batter (flatten out with the measuring cup...otherwise it will look like an oatmeal ball and won't turn into a yummy pancake).
Cook until browned on one side and flip.
Cook other side until cooked through.
Enjoy with your favoirte pancake topping!
