On the 8th day of Christmas my true love made for me...warm, pumpkin pancakes!
These are soft and oh so good. Serve them with some homemade syrup and you have the makings for a delicious breakfast, lunch, or dinner!
1 1/2 C flour
2 TBSP brown sugar
2 tsp baking powder
1 tsp salt
1 1/3 C milk
3/4 C canned pumpkin
1/2 C ricotta cheese
Combine all dry ingredients.
Add the remaining ingredients and whisk together.
On a hot griddle or pan coated with a thin layer of butter, drop 1/4-1/3 cup of batter.
Cook on medium until the batter bubbles - flip the pancake.
Cook until golden brown.
