Baked Ice Cream Cake

On the 7th day of Christmas, my true love made for me - baked ice cream cake!

This is not your typical ice cream cake - meaning a cake made out of ice cream.  The ice cream in this cake is actually baked into the cake...weird, but so tasty!  This way you can enjoy ice cream cake even when it is not summer.  I want to experiment with different types of cakes and ice creams, but here are two that have been tried and came out delish!


Dulce de Leche Ice Cream Cake:
1 yellow cake mix
3 eggs
1/2 cup canola oil
1 pint Hagen Daz Dulce de Leche ice cream, softened

Glaze:
1 cup powdered sugar
2-3 tablespoons cream

Caramel sauce (optional)

Vanilla Ice Cream Cake:
1 yellow cake mix
3 eggs
1/2 cup canola oil
1 pint vanilla ice cream

Glaze:
1 cup powdered sugar
2-3 tablespoons cream



Preheat oven to 350.  
Butter and flour a 10 cup Bundt pan.  
Set the ice cream on the counter to thaw and get soft enough to mix/melted.  
Combine eggs, oil, and melted ice cream.  
Add the cake mix and combine the wet and dry ingredients well.  
Bake for 35-50 minutes (totally depends on your oven) or until a toothpick inserted into the center of the cake comes out clean.
Let the cake cool for 10 minutes before inverting it onto a serving dish.  
Combine the glaze ingredients.  
Glaze the cake while still warm. 
Drizzle caramel on top when the cake is cool.
