Parmesan Crusted Tilapia


One of our favorite gifts - for any occasion really - are gift cards to different restaurants.  We are extremely budget conscious and don't go out to eat often, so when a "free" chance to do so arises, we love it!  We enjoyed a fun night out at Red Lobster a few weeks ago and I had a parmesan crusted tilapia dish that I fell in love with!  I did some research and put together this recipe - it differs slightly from the tipaia you would order at Red Lobster, but we loved it nonetheless and will be making it often because it is so simple and irrestible!

3 TBSP mayonnaise
2 TBSP lemon juice
1/2 tsp salt
1/2 tsp lemon pepper
1 C panko crumbs
1/2 C grated parmesan cheese
1/4 C butter, softened
3-4 tilapia fillets

Preheat oven to 425.
Line a cookie sheet or baking dish with edges with foil and spray with non-stick spray.
Lay the fillets out evenly spaced onto the pan.
In a small bowl, mix together the mayonnaise, lemon juice, salt, and lemon pepper.
Spread the sauce mixture evenly over each of the fillets.
In a separate bowl, combine the panko crumbs, parmesan cheese, and butter.
Pat the crumb mixture onto the sauce on each fillet.
Bake for 15-20 minutes until golden brown and the fillets are cooked through.
Serve with wild rice and steamed vegetables for a complete and very tasty meal!
