Baked Provolone Chicken

Here is my own take on a chicken parmesan dish.  I had to improvise and it turned out pretty good!

2 skinned, boneless chicken breasts (cut in half)
1 egg
salt and pepper to taste
about 1 C plain bread crumbs
1 tsp red pepper flakes
3-4 C spaghetti sauce
4 slices of provolone cheese
olive oil

Preheat the oven to 400.
Grease a baking dish.
Mix bread crumbs and red pepper flakes.
Salt and pepper the chicken breasts to taste.
Coat in egg.
Coat well in bread crumb mixture.
Place in baking dish.
Drizzle with olive oil.
Bake chicken for about 45 minutes (or until done...not pink inside).
Add sauce to the dish and place a slice of cheese on each piece of chicken.
Let it bake until the cheese is melted.
Serve!
