Banana Bread

A great way to use up those brown bananas and make a husband happy on a Sunday morning!  I got this recipe from a Taste of Home cookbook.

1/4 C softened butter
3/4 C sugar
2 eggs
2 medium-large mashed ripe bananas
1/2 C sour cream
2 1/4 C flour (+ a little less than 1/4 C for high altitude)
1 tsp cinnamon
3/4 tsp baking soda
1/2 tsp salt
1/2 C walnuts and/or 1 C chocolate chips (optional)

Preheat oven to 350.
Grease a bread pan.
Cream butter and sugar.
Add eggs (one at a time...mix after each egg).
Stir in bananas and sour cream.
Add flour, cinnamon, baking soda, and salt.\Stir until they are just moistened...don't over stir.
Fold in nuts and/or chocolate.
Bake for about an hour (check every few minutes for the last 15-20 minutes) until a toothpick inserted near the center comes out clean.
Cool in the pan for 10 minutes.  Transfer to a wire rack to cool completely.
