This may be my new go-to chicken recipe! It is so easy and pairs nicely with a variety of side dishes. Eat it as a taco filling or with rice. Put it in a sandwich with avocado sauce (here) or red pepper sauce (here). It has a tiny bit of kick and a deep flavor that was perfect with rice and pico de gallo. Plus it is one of the easiest chicken dishes I have ever made!
2 TBSP chili powder
2 TBSP cumin
1 TBSP paprika
1/4 tsp salt
1/4 tsp pepper
1 TBSP brown sugar
2 TBSP olive oil
4-6 chicken breasts
In a small bowl, combine all of the spices and the brown sugar.
Stir in the olive oil until a paste is formed.
Rub the paste all over all sides of the chicken.
Place the chicken in a baking dish and cover the dish with plastic wrap.
Let the chicken sit in the refrigerator for 2-10 hours.
Grill the chicken until cooked through.
Serve as whole chicken breasts or slice to use as a filling for a salad or sandwich.
