A friend of mine posted a recipe for peach salsa on her blog and I knew I had to make some. We have delicious peaches here in the fall and I cannot get enough of them! This recipe is completely customizable. Make it as spicy or cilantro-y as you would like!
2 large peaches, diced
1/3 C red onion, finely chopped
1 jalapeno, seeds removed, finely chopped
1/2 C chopped cilantro
1 TBSP honey
2-3 TBSP lime juice (about 2 limes)
dash Cayenne pepper
dash kosher salt
In a small dish, mix the honey, lime juice, Cayenne pepper, and salt.
Place the peaches, onion, jalapeno, and cilantro into a large bowl.
Drizzle the honey mixture over the peach mix and toss until all of the fruit and veggies are coated.
Refrigerate for 1-2 hours.
Serve with chips, pita bread, or as a topping.
