This is my go-to waffle recipe because it is so quick and easy and I always have the ingredients on hand. Depending on how I feel and whom I am feeding, I will mix up the flour ratios (more or less whole wheat flour). The recipe is easily doubled or even tripled if necessary. I freeze any extra waffles we have in large plastic bags and reheat them in the toaster or microwave for a quick meal or snack.
1 1/2 C flour (I mix it up and do half white and half wheat most of the time)
1 tsp baking powder
1/2 tsp salt
2 eggs
1 C milk
1/4 C butter, melted
Whisk all the ingredients together.
Prepare the waffles according to your own waffle iron.
