Oatmeal Butterscotch Cookies

Wow.  I love oatmeal and I love butterscotch so what a better combination than this fabulous cookie!  Go ahead...try to eat just one!




8 TBSP unsalted butter, softened
1/2 C brown sugar
1/4 C granulated sugar
1 egg
1/2 tsp vanilla
3/4 C flour flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1 1/2 C old fashioned oats
3/4 C shredded coconut
1/2 C butterscotch chips
1/4 C toffee bits

Preheat the oven to 350.
Line a cookie sheet with parchment paper.
Cream together the butter and sugars.
Add the egg and vanilla.
Mix in the flour, baking, soda, and cinnamon until smooth.
Fold in the oats, coconut, butterscotch chips, and toffee bits.
Place in 2 TBSP size scoops onto the parchment paper.
Bake for 12-15 minutes (rotate the pan halfway through the baking time).
And then really...try to eat just one!
