This recipe came from my awesome sister-in-law. They are sooo good! I love the fact that the oats are processed into a flour...it gives the cookies the oat taste without the large chunks of oats. The recipe can be easily doubled to make about 5 dozen cookies.
1/2 C butter
1/2 C sugar
1/2 C brown sugar
1 egg
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla.
1 1/2 C oatmeal (use 1 1/2 C of unprocessed oats...processed to make flour-just blend it in a food processor until it has a flour consistency)
1 1/4 C flour (this is for higher elevation...if you are at a lower elevation, you can just leave it at 1 C)
1 King size Symphony toffee bar crushed into chunks.
Preheat oven to 350.
Cream together butter, sugar, and brown sugar.
Mix in vanilla soda, salt, and powder.
Add oatmeal and flour.
Mix in the crushed Symphony bar.
Drop onto a cookie sheet.
Bake for 9-11 minutes.
