While at a friend's rehearsal dinner, we had some awesome peach cobbler. I love any kind of dessert with fruit, so I decided to recreate my own. I have made a fruit crisp before, but I wanted the cakey-like taste of the cobbler.
1 yellow cake mix
2 cans of sliced peaches
1/2 C oats
1-2 tsp cinnamon (depending on taste)
1/2 tsp nutmeg
1/3-1/2 C butter, sliced into thin squares
Preheat oven to 375.
Spread peaches and most of the syrup out on the bottom of a 9x13 pan.
Set about 3 TBSP of the syrup to the side.
Mix together the cake mix, cinnamon, nutmeg, and oats.
Spread dry ingredient mix evenly over the top of the peaches.
Place the thin slices of butter evenly over the top of the dry mix.
Drizzle the remaining syrup over the top.
You want to make sure that once the butter melts, all the dry parts will become moist.
Bake for about 40 minutes or until a golden crust forms on the top.
Let it cool for about 15 minutes.
Serve warm (with vanilla ice cream)!
