Truffle Cookies

I got this recipe from this website...and love them!  They are so chocolately though...have a glass of milk nearby and don't try to eat too many at once.  The next time I make them I am planning on substituting 1/2 the chocolate chips with peanut butter chips to make peanut butter truffle cookies instead!


1 1/4 C softened (not melted) butter
2 C powdered sugar
1/3 C unsweetened cocoa powder
1/4 tsp salt
1/4 C sour cream or plain yogurt
1 tsp vanilla extract
2 1/4 C flour
2 C semisweet or bittersweet chocolate chips
about 1/3 C cocoa powder (for rolling)
about 2/3 C powdered sugar (for rolling)

Preheat oven to 325.
Cream together the butter and powdered sugar.
Add salt and cocoa powder.
Stir in yougut/sour cream and vanilla.
Carefully mix in flour until there are no clumps in the batter.
Add chocolate chips (like I said, next time I will try part peanut butter chips).
Refrigerate for 30-60 minutes.
Place a sheet of parchment paper on a cookie sheet.
Roll into 1" balls and roll in cocoa powder and place on parchment paper.
Bake for 10 minutes (set the timer...you definitely don't want to over cook these).
Remove from the oven and let them sit for about 5 minutes.
Put on a wire rack for about another hour to cool.
When they are cool, coat them with powdered sugar.
Store in an airtight container (if there are any left to store).
