I love lemon. These little bites are a cookie and a lemon bar all mixed into one!
1/2 C shortening
3 oz softened cream cheese
1/2 C sugar
1 tsp vanilla
1 tsp grated lemon rind
1/2 tsp salt
1 C flour
Preheat oven to 350.
Cream together the shortening, cream cheese, sugar, and egg.
Add vanilla and lemon rind.
Mix in salt and flour.
Spoon into mini-muffing tins and fill about 2/3 full.
Create an indentation in the cookies to put the filling.
1 C sugar
2 TBSP flour
2 TBSP lemon juice
grated zest of 1 lemon
1/2 tsp baking powder
Spoon the filling with a teaspoon into the indentations in the cookies.
Bake for about 10 minutes at 350.
Remove the pan and put it in the refrigerator for about 5 minutes (this makes it easier to remove the cookies).
Remove cookies from the pan and let them cool (or serve warm)!
Sprinkle with powdered sugar if desired!
