This recipe is thanks to the creative genius of my amazing husband. Enjoy with some homemade
1 can black beans, drained
1 avocado, chopped into small pieces
1 can Mexican style tomatoes
1/2 tsp cumin
1/2 tsp chili powder
1/4 C cilantro, finely chopped
1 tsp lime juice (about 1/2 squeezed lime)
1 C finely shredded jack/cheddar combination cheese
1 serrano chili pepper, remove seeds
1 small white onion, finely chopped
2 cloves garlic, finely chopped
Saute onion and garlic in 1 tsp canola or vegetable oil for about 4-5 minutes.
Add black beans and tomatoes. Cook for 1-2 minutes.
Remove mixture from heat. Put in bowl.
Add cumin, chili powder, and serrano chili.
Add cilantro, lime juice, cheese, and avocado.
