Aebleskivers

Breakfast for dinner is one of my favorites...actually, breakfast any time of the day is amazing.  This is a Danish dish that is a Christmas tradition in my family.  The cast iron pan is a necessity, otherwise they are pretty simple.

1 1/4 C flour
1/2 tsp salt
2 1/4 tsp baking powder
2 TBSP sugar
1/2 tsp cinnamon
1 egg
1 C milk

Combine all the ingredients...they will be like a pancake mix.  Heat the pan for a couple of minutes on the stove.  Coat the wells of the pan with butter.  Fill the wells about 1/2-2/3 full of batter.  After a couple of minutes, lift the 1/2 sphere sideways about halfway out of the pan.  Let it cook for another minute or so on the new side.  Finish rotating the aebleskiver to cook the final side.  You will end with an open ended ball.  Serve with typical waffle or pancake toppings!
