Some people make snickerdoodles like regular sugar cookies rolled in cinnamon and sugar.  If that is the only way you have ever made snickerdoodles, you are missing out.  Cream of tarter is the essential ingredient in these snickerdoodles - do not leave it out!

1 C shortening (1/2 butter)
1 1/2 C sugar
2 eggs
2 3/4 C flour
2 tsp cream of tarter
1 tsp baking soda
1/2 tsp salt
Combine 2 tsp cinnamon and 2 TBSP sugar.

Preheat oven to 400.
Cream shortening and sugar. Add flour, cream of tarter, baking soda, and salt.
Roll into 1'' balls.
Roll balls in cinnamon/sugar mix.
Bake on ungreased cookie sheet for 7-9 sure to not overbake!
