Chocolate Andes Mint Cookies

These cookies are absolute heaven!  If you are a chocolate or a mint fan - these are a must have!  During the holiday season, the best way to make them is to purchase mint M&M's that are only available during the holidays and substitute them for the Andes Mints.  Make sure you have a large glass of milk nearby!


1 C softened butter
2/3 C sugar
2/3 C brown sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
3/4 C cocoa
2 C flour
Andes Mint chips, Mint M&M's, chocolate chips, and/or white chocolate chips to taste

Preheat oven to 350.
Cream together butter and sugars.
Add eggs and vanilla.
Mix in dry ingredients.
Add whatever mint-y or chocolate-y add-ins you want! Do not over bake...these are much better soft!
Spoon TBSP sized scoops onto a cookie sheet.
Bake for 8-9 minutes.
