Homemade Root Beer

We made our own root beer for our Fourth of July celebrations this year and it was so easy and delicious.  Pair some of the root beer with some homemade ice cream and you have an amazing root beer float.  It will be at many parties in the future for sure!


This recipe makes 2 gallons of root beer.

3 C sugar
26 2/3 C cold water
1 oz. root beer extract
4 lbs. dry ice

Combine the sugar, water, and extract in a large cooler.
Add the dry ice.
Do not secure the lid tightly, just set it on.  If it is too tight, it can build up pressure (which equals exploded root beer all over your kitchen...).
Let the mixture sit for at least one hour before serving.
