Greek Pitas

This was another one of our vegetarian meals and it was tasty!  It was also super easy to put together and could be customized to the tastes of your family.  I can also imagine it would be fun to have kids make their own!

The ingredients do not have measurements...use whatever amount appeals to your taste buds!

basil pesto sauce
spinach, chopped
tomatoes, chopped
feta cheese, crumbled
parmesan cheese, grated
red onion, sliced
mushrooms, sliced
pitas or flatbread
olive oil

Preheat oven to 400.
Place pitas on a cookie sheet.
Spread with a layer of pesto sauce.
Cover with veggies.
Sprinkle with feta cheese and parmesan cheese.
Drizzle with olive oil and sprinkle with pepper to taste.
Bake for 10-12 minutes until the pita is lightly crisped.
