I altered this recipe from a coworker who brought a similar dip to work. I love healthy, delicious vegetables! This is so simple and can work as a topping on tacos or just as a dip for chips.
1 can black beans, drained
1 can white or yellow corn, drained
1 can mild Rotel tomatoes, drained
3 green onions, thinly sliced
1 avocado, cut into small pieces
1 TBSP olive oil
1 TBSP red wine vinegar
salt and pepper to taste
Combine all ingredients in a serving bowl.
