The lemon bars are from one of the best cookbooks I have bought - Kitchen Life (Art Smith). They are so good warm or chilled!
Crust:
1 C flour
1/4 C sugar
pinch of salt
1 stick butter, room temperature, cut into tablespoons
Filling:
2 eggs
1 C sugar
2 TBSP flour
2 TBSP lemon juice
grated zest of 1 lemon
1/2 tsp baking powder
powdered sugar for topping
Preheat oven to 350. Cover 8"x8" pan with foil that can be easily removed after baking.
Mix flour, sugar, salt and butter with an electric mixer on low speed until it all clumps together. press the dough evenly on the bottom of the foil lined pan. Bake for about 15 min. until crust is set. Put it in the refrigerator for about 10 min. until cooled.
Prepare filling - mix eggs, sugar, flour, lemon juice, lemon zest, and baking powder well.
Pour into the cooled crust and bake for 20-25 minutes.
Let cool in the pan.
Remove from pan using foil.
Remove entire lemon bar from foil.
Cut into smaller bars and sift powdered sugar on the top.
Bars can be tightly covered and refrigerated for a few days.
