Wow. These are the softest cookies I believe I have ever eaten. The hint of lime and coconut dusted in powdered sugar prevent me from having self control when it comes to eating another one and another one and another one...
This recipe makes 3-4 dozen cookies.
1 C sugar
3 oz. cream cheese, room temperature
zest of one lime
1/2 C butter, melted
1 large egg
1 TBSP milk (I used 2%)
1 TBSP lime juice
2 1/4 C all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 C shredded sweetened coconut
1/2 tsp salt
1/2 C powdered sugar
Preheat the oven to 350.
Line a cookies sheet with parchment paper.
Cream the sugar, cream cheese, lime zest, and butter.
Blend in the milk, lime juice, and egg.
Mix in the flour, baking soda, powder, coconut, and salt.
Roll the dough into 1" balls and roll them in the powdered sugar.
Place them on the cookie sheet (about 12-16 cookies at a time, a couple inches apart).
Bake for 10-12 minutes until the bottoms are golden and the tops crinkle.
