Tilapia and Corn Salsa

This is one of the most simple dishes I have made and one of my favorites right now.  It is healthy (fish and vegetables) and gives us another great excuse to use the grill!  Plus, with a lot of different seafoods being so expensive, tilapia is an inexpensive option...I only payed about $3.70 per pound!  The corn salsa also goes really well in cheddar cheese quesadillas or on tacos.

4 tilapia fillets
1 TBSP olive oil
1/4 tsp salt
1/4 tsp pepper
1 can black beans, rinsed and drained
1 can whole kernel corn, drained
3/4 C Italian salad dressing
2 TBSP chopped green onion
2 TBSP chopped sweet red pepper

Brush both sides of the fillets with olive oil and sprinkle them with salt and pepper.
Broil on a broiler pan for 5-7 minutes 4-6 inches away from the heat or grill on the barbecue on medium heat until the fish is done (opaque and firm).
Combine the beans, corn, green onion, red pepper, and Italian dressing in a serving bowl.
Serve the fish covered with the corn salsa.
