This is a quick and easy dinner that I usually have things on hand for...which is great when things get crazy busy!
1 can of cream of chicken soup
1/2 C apple juice
2-4 chicken breasts
1 C shredded mozzarella cheese
1 package of stuffing mix, left unprepared
1/4 C melted butter
Preheat the oven to 350.
Spray a baking pan with non-stick spray.
Combine the soup and juice in the pan.
Place the chicken breasts in the pan.
Cover with cheese.
Cover the cheese layer with the dry stuffing mix.
Drizzle with the melted butter.
Bake for about 1 hour (until the chicken is cooked through). For a crispier top, bake uncovered. For a softer top, cover the pan with aluminum foil before baking.
Enjoy over steamed vegetables!
