Peanut butter is amazing! These cookies are soft on the inside with a little crunch on the outside.
1/2 C butter
1/2 C peanut butter
1/2 C sugar
1/2 C brown sugar
1 egg
1/2 tsp vanilla
1 1/4 C flour
3/4 tsp baking soda
1/2 tsp salt
1 C peanut butter chips (optional)
Preheat oven to 375.
Cream together butter, peanut butter, sugar, and brown sugar.
Add egg and vanilla (and peanut butter chips if desired).
Mix in remaining dry ingredients.
Roll into 1" balls in sugar and criss-cross pressing gently with a fork.
Bake for 8-10 minutes.
