Sweet and Sour Chicken

I love this recipe.  It is simple to prepare, but takes a while in the oven.
There are four parts...the chicken, sauce, rice, and vegetables.

Sauce:
1 1/2 C sugar
1/2 C chicken broth or pineapple juice or water
2 TBSP soy sauce
6-8 TBSP ketchup
1 C vinegar
pineapple chunks (optional)

Mix all ingredients together in a medium bowl.
Add pineapple chunks if desired!
Set aside until chicken is ready.

Chicken:
2 large chicken breasts cut into bite-sized pieces
1 egg
garlic salt
corn starch or flour

Mix the egg and a pinch or two of garlic salt.
Baste each piece of chicken in the egg mixture and cover in corn starch.
Fry in a couple TBSP of oil for 1-2 minutes on each side.
Put the chicken in a baking dish.
Cover with sauce (recipe above).
Bake for 50 minutes at 350 degrees.
Serve with rice and vegetables.

For vegetables, I made a simple green pepper and onion mix sauteed in soy sauce.  The green pepper added an amazing, complementary sweet flavor to the sour of the pineapple.  I highly recommend it!

When the chicken and veggies are done, pile them high on top of some white rice and enjoy.
